these cupcakes are great for a high tea or a little girls party. I love them because their just a mouthful.. (no need to feel guilty) ;)

Makes: about 18
Ingredients:
- 100g butter, softened
- 1/3 cup caster sugar
- 1/2 teaspoon vanilla essence
- 1 egg
- 3/4 cup self-raising flour
- 1/3 cup desiccated coconut
- 1/4 cup milk
Method:
- Preheat oven to 180°C. Using an electric mixer, beat butter, caster sugar and vanilla essence in a bowl until pale and creamy. Add egg and beat to combine. Combine flour and coconut into the bowl. Stir into butter mixture alternately with the milk. Mix until just combined. Divide mixture between muffin holes.
- Bake for 12 to 15 minutes or until golden brown and a skewer inserted into one of the cupcakes comes out clean. Stand cakes in pan for 5 minutes before turning out onto a wire rack to cool.
- After the cupcakes have cooled completely, pipe on the icing
